EASY BUT FANCY POTATOES
(MICROWAVE)
 
6 med. size potatoes
1 onion, sliced
Dried parsley
Salt & pepper
1 c. shredded cheddar cheese
1/2 stick butter

Grease a 2 quart casserole dish. Slice potatoes very thin. Place half of the potatoes in a layer in the dish. Add a layer of half of the onion slices.

Sprinkle with dried parsley. Salt and pepper the layer. Add 1/2 cup grated cheese and top with half of the butter which is cut into pats. Repeat the layering of all ingredients. Cover and microwave 15 minutes or until potatoes are tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
