SWEET CORNMEAL PIE 
This pie is a truly Southern pie. The cornmeal gives it a great texture. My mother believes it to be a poor man's version of a French Coconut Pie as it tastes similar but doesn't have the coconut. It is good warm or cold and very easy to make. I've never seen this recipe anywhere else. My mom isn't sure where she got it from. She made it all through my childhood.

2/3 cups butter, melted
1 2/3 cups sugar
3 eggs, beaten lightly
1 cup milk
1 tsp. vanilla
6 tsp. cornmeal mix
2 unbaked pie shells

Mix melted butter and sugar together. Add beaten eggs, milk and vanilla. Mix together well. Stir in the cornmeal mix. Pour into two unbaked pie shells. Cover the edges of each pie shell with strips of foil to prevent over browning.

Bake both pies together at 425°F for 30 to 40 minutes. Remove the foil strips during the last half of baking.

Makes 2 pies.
