SQUASH CASSEROLE 
2 c. cooked squash
1 c. grated Cheddar cheese
1/4 c. chopped onion
1/2 c. milk
1 1/2 c. crushed Ritz crackers
1 egg
1 tsp. salt
Dash of pepper
1 stick butter

Saute onions in butter until tender. Add to other ingredients. Put in greased casserole; top with cracker crumbs. Bake at 350 degrees for 45 minutes or until brown.
