MARINATED VEGETABLE SALAD 
3 1/2 tbsp. white wine vinegar
2 tbsp. minced fresh basil or 1/2 tsp. dried basil, crushed
1/2 tsp. salt
1/8 tsp. black pepper
dash of sugar
6 tbsp. olive oil
ripe tomatoes
green olives and/or black olives
salad greens

For dressing, place vinegar, basil, salt, pepper and sugar in food processor or blender. With motor running, add oil in slow, steady stream until oil is thoroughly blended.

Cut tomatoes into wedges. Combine tomatoes and olives. Add dressing; toss lightly. Cover and let stand at room temperature 30 minutes to blend flavors, stirring occasionally. Serve over favorite salad greens.
