CRABMEAT AU GRATIN 
1 stalk celery, finely chopped
1 c. onion, finely chopped
2 cloves garlic, finely chopped
1/4 lb. butter
1 (13 oz.) can evaporated milk
1 tsp. red pepper
1 tsp. black pepper
1 lb. white crab meat
1/2 lb. cheddar (1 1/2 c.)
1/2 c. all purpose flour
2 egg yolks

Saute celery, onions and garlic in butter until onions are soft. Blend in flour. Pour in milk gradually, stirring constantly. Add egg yolks, salt, red and black pepper. Mix all together. Cook 5 minutes. Put crabmeat in bowl and pour cooked sauce over crabmeat. Blend well and transfer to a lightly greased casserole dish. Sprinkle with grated cheddar cheese. Bake at 375 degrees for 10 to 15 minutes or until lightly brown.
