RHUBARB BARS 
PASTRY:

1 1/2 c. flour
1 1/2 c. oatmeal
1 c. brown sugar
1 tsp. baking soda
1 c. soft butter
1/2 c. chopped nuts

FILLING:

2 c. diced rhubarb
1 c. sugar
4 tbsp. cornstarch, dissolved in 1/4 c. water
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. red food coloring

Make crust by combining pastry ingredients until crumbly. Pat three fourths of mixture into a 9"x13" greased baking pan. Reserve the rest for topping.

Cook filling ingredients in saucepan and cook until thick. Cool. Spread over crumb mixture and spread the remaining crumb mixture on top. Pat down gently. Bake about 35 minutes at 350 degrees.
