FORGOTTEN DESSERT 
3 egg whites
2/3 c. sugar
Chopped pecans
1 tsp. vanilla
3 tbsp. pineapple preserves
1/2 tsp. cream of tartar
18 single soda crackers
Whipping cream (1 c.)
Coconut (opt.)

Beat egg whites until stiff. Add cream of tartar and sugar; add gradually while beating. Fold in 18 single square soda crackers rolled fine. Add chopped pecans and 1 vanilla. Pour in greased baking dish and bake at 350 degrees for 25 to 30 minutes. Cool. Whip the cream and add 3 tablespoons pineapple preserves and spread on top. Sprinkle with coconut and chill.
