MEXICAN LASAGNA 
1 lb. ground beef
1 pkg. (15 oz.) Ricotta cheese
2 eggs, slightly beaten
6 (8 inch) fajitas
1 1/2 c. shredded Cheddar cheese
1 can (16 oz.) tomato sauce
1 pkg. (1 1/8) Taco Seasoning
1 pkg. (1 1/8) Durkee French Fried Onions

Brown beef, drain. Add tomato sauce, seasoning and simmer uncovered 5 minutes. Add 1/2 can of onions. In separate bowl combine Ricotta cheese and 1 cup of Cheddar cheese and eggs. Place 3 fajitas in greased 8 x 12 inch dish (overlapping).

Spoon meat mixture on top of fajitas, then top with other 3. Put cheese mixture on top of this. Bake covered at 350 degrees for 45 minutes. Uncover, sprinkle with remaining cheese and onions. Bake another 5 minutes. Cut into squares. Serve with a lot of salsa on top. Enjoy!
