SAUSAGE ZUCCHINI SKILLET 
1 lb. sausage meat
1 onion, chopped
1 (1 lb.) can tomatoes
3 small zucchini, cubed
1 cup grated sharp cheddar cheese

Brown sausage and onion. Pour off fat, add tomatoes and zucchini. Simmer with lid on for 10 to 20 minutes until desired tenderness. Take off lid. Cook until desired thickness. Sprinkle cheese on - wait until melted or put lid on until melted.
