HOMINY RIO GRANDE 
1 sm. onion, minced
2 tbsp. vegetable oil
1 (15 oz.) can tomatoes, chopped
1/4 tsp. chili powder or more to taste
1/2 tsp. salt
1 tsp. sugar
1 lg. (or 2 sm. cans) Hominy drained
1 c. grated Cheddar cheese

Saute onion in oil until soft and golden. Add tomatoes, chili powder, salt and sugar. Cook simmering until reduced by one third. Add the hominy, heat until hot. Stir in the cheese and continue heating just until the cheese is melted.

Can do ahead, reheat and add cheese at the last minute. Great with BBQ.
