100 ROLLED GRAPE LEAVES OR 12 STUFFED SQUASH | |
1 (8 3/4 oz.) can chick peas, skins removed 1 c. UNCLE BEN'S® rice 2 bunches parsley, cut fine 1 oz. pignolia nuts 1/2 c. walnuts, cut fine 1 med. onion, cut fine 1/2 c. Mazola oil Salt and pepper to taste 1/2 c. lemon juice (fresh lemons may be used) 1 (6 oz.) can tomato paste (for squash only) 2 tbsp. dried mine (for squash only) 1 lg. clove garlic, minced (for squash only) Prepare ahead the large grape leaves (boiled, stems removed) or core our squash. Mix all the above ingredients except 1/4 cup lemon juice. Roll into cigar shape. Cover grape leaves with water only. After it boils, add 1/4 cup lemon juice. Let cool until very cold. Remove from water. Eat cold and throw away juice. For the squash, add tomato paste (already diluted in water. Cover squash and cook same as above except add mint, garlic and lemon juice. |
