BREAST OF CHICKEN WITH TARRAGON
AND APPLES
 
4 breasts of chicken, split
Butter for browning
1 c. apple juice
1 med. onion, sliced
1 1/2 tsp. tarragon
1 or 2 apples
4 tsp. Dijon mustard

Brown chicken in butter. Add apple juice, onion and tarragon. Simmer for 20 minutes or until chicken is done. Peel, core and cut up apples and let simmer until apples are hot. Take out chicken and apples. Add mustard; beat until well mixed. Return chicken and apples to pan. Stir until well coated. Add additional liquid if needed.
