MIKE'S STUFFED BANANA PEPERS 
8 ounces goat cheese
1 cup grated swiss cheese
1 cup ricotta cheese
8 ounces cream cheese
1 cup 4 cheese (asiago, parmesan, fontine, provolone)
1 cup mushrooms (portabella’s)
¼ cup pesto sauce
salt and pepper, to taste
4-5 cloves of garlic
paprika
1 cup Italian bread crumbs
1/4 cup parsley
4 Italian sausage patties
16 large banana peppers or mushrooms

Place cream cheese and goats cheese in bowl and microwave for 30 seconds to make soft. Once soft, mix and add ricotta cheese and pesto sauce.

Add cloves of garlic and mushrooms to food processor.

Cook sausage patties until golden brown and add to food processor to process meat and garlic/mushroom together.

Use food processor or large mixing bowl to combine all cheeses, breadcrumbs, meat with freshly chopped parsley and salt and pepper to taste.

Cut peppers the long way and clean seeds from peppers and stuff peppers with mixture above. May sprinkle extra cheese like Colby jack and paprika over peppers.

Cook at 400°F for 15 minutes.

This filling is so delicious. I ate the leftovers straight from the bowl! I used ground sausage and added half to the processor and half directly to the cheese mixture. I used banana peppers straight from my garden, and am now anxious to try it with mushrooms and anything else I can think of.
