CAJUN SHRIMP OVER FETTUCCINE 
10 lg. shrimp, peeled and deveined
1 jar Cajun spice
4 oz. brandy
1 tomato diced
2 tbsp. oil
1 green pepper, diced
1 clove garlic, chopped
1 pt. heavy cream
Fresh fettuccine for 2 people

Have water boiling for pasta. Fresh pasta only takes about 3 minutes, so while shrimp is cooking, pasta should be cooking. Heat saucepan with 2 tablespoons of oil. Roll shrimp in Cajun spice until coated.

Place shrimp in pan and cook on both sides until shrimp start turning pink. Add garlic and green pepper. Stir and cook for 1 minute. Remove pan from heat and quickly add brandy. Put pan back on heat and stir.

When brandy comes to a simmer, add diced tomato and heavy cream; stir. While cream is reducing, start cooking pasta. Cook the cream until it coats a spoon; about 3 minutes.

When pasta is done, drain and arrange on a serving platter. Arrange shrimp over pasta and cover with sauce. Garnish with parsley sprigs.
