COCIDO DE FRUTA PASO 
1 1/2 c. pitted, mixed dried fruit
3 tbsp. raisins
3 lbs. top round
3 tbsp. safflower oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, chopped
1 pepper, chopped
1-2 inch cinnamon stick
1 tsp. oregano, crushed
1 c. dry red wine

Soak the dried fruits and raisins in 1 1/2 cups water for 30 minutes. Drain and reserve soaking liquid. Saute the beef in a heavy ovenproof casserole. Add vegetables, cinnamon and oregano; cook over medium heat for 5 minutes. Add wine and soaking liquid. Cover and bake at 325 degrees for 1 hour. Add more water if necessary. Add fruit and raisins. Return casserole to the oven for an additional 20 minutes. Serve with rice. Serves 6.
