BORECAS 
DOUGH:

1 c. oil
2/3 c. water
1 tsp. salt
4-1/2 c. flour

FILLING:

2 c. mashed potatoes (fresh or instant)
1/2 tsp. salt according to taste
2 tbsp. oil or butter
3 beaten eggs
4 oz. mashed Feta cheese
2 c. grated Parmesan cheese

Reserve 1/2 cup cheese.

Reserve 1/4 c. beaten egg.

Mix dough a little softer than pie crust.

Form balls the size of golf balls, roll into 4 inch circles. Put one tablespoon filling in center of circle. Seal edges by pinching together.

Dip top into beaten egg and then into grated cheese.

Bake on ungreased cookie sheet in 400 degree oven for 30 minutes until golden brown. Makes 36 to 40 turnovers.
