EGGS BENEDICT | |
8 eggs Butter 1/2 tsp. salt 1/8 tsp. white pepper 4 English muffins 4 slices ham or 8 slices Canadian bacon 1 c. Hollandaise sauce Split, butter and toast the English muffins. Cut the ham slices in halves to fit the muffins, or fry the Canadian bacon. Poach the eggs either in buttered poaching cups or in a pan rapidly boiling water into which a teaspoon of white vinegar and a half teaspoon of lemon pepper marinate has been added. Place ham or bacon on muffins and eggs on top of ham. Cover with Hollandaise Sauce. 4-8 servings. |
