EGGS BENEDICT 
6 slices ham
2 tbsp. butter
6 eggs
3 English muffins, split, buttered and toasted
Hollandaise sauce, recipe follows
3 black olives, halved

In skillet lightly brown ham on both sides; set aside. Place butter in skillet on medium heat, fry each egg to desired doneness, over easy, up, etc. Place ham slice on English muffin halves, top with egg and Hollandaise sauce, garnish with olive.

HOLLANDAISE SAUCE:

4 egg yolks, whipped
1/2 c. butter
2 tbsp. lemon juice
Dash of salt and pepper

In saucepan, heat butter, lemon, salt and pepper until butter is melted. Do not boil. Add whipped egg yolks gradually, remove from heat and serve immediately.
