OVEN OMELETTE 
2 c. shredded cheddar cheese (8 oz.)
1 c. chopped green chilies, drained (4 oz.)
2 c. Monterey Jack cheese (8 oz.)
1 1/4 c. milk
3 tbsp. flour
1/2 tsp. salt
3 eggs
1 c. tomato sauce (8 oz.)

Layer cheddar cheese, chilies and Monterey Jack cheese in greased 8"x8"x2" baking dish. Beat milk, flour, salt, and eggs; pour over cheese mixture. Bake at 350 degrees for 40 minutes. Heat tomato sauce. Add 1/2 cup sliced mushrooms. Serve over omelette.
