PLUM TORTE OR APPLE CRANBERRY
TORTE
 
1/2 c. unsalted butter
3/4 c. sugar
1 c. flour, sifted
1 tsp. baking powder
Pinch salt (optional)
2 eggs
24 halves of pitted purple plums
Sugar, lemon juice, cinnamon for topping

Cream sugar and butter in large bowl. Add eggs, then flour and baking powder - beat well. Spoon batter into 8, 9, or 10 inch springform. Lay plums, skin side up, on top of batter. Sprinkle lightly, depending on sweetness of plums with sugar, lemon juice and cinnamon. Bake 1 hour at 350 degrees; cool; refrigerate or freeze (8 servings).

FOR APPLE-CRANBERRY: Peel, quarter and slice 2 or 3 large baking apples. Arrange 1/2 cup of berries over batter and top with apples. Sprinkle as above.
