CHICKEN PRIMAVERA 
6 skinned & boned chicken breasts, halved, slightly flattened
1/4 tsp. salt
1/8 tsp. pepper
1 can artichokes, halved
1 c. green beans, frozen, peas or asparagus
1 pkg. (6 oz.) snow peas or sugar snap peas (frozen)
3 green onions, cut diagonally into 1/2 inch pieces
6 tbsp. butter, cut in sm. pieces
6 tbsp. grated Parmesan cheese
1 med. red bell pepper (cut into 2 1/2 x 1/8 inch strips)

Heat oven to 400 degrees. Lightly grease 9 x 13 inch pan with vegetable spray or oil. Arrange slightly flattened chicken pieces evenly and sprinkle with salt and pepper. Distribute vegetables evenly over chicken, dot with butter, and sprinkle with cheese. Cover tightly with foil. Bake 20 minutes. Serves 6.
