CUDIGHI (COULD-I-KEY) | |
Cudighi is a traditional Italian sausage that can be made into links, patties or served ground. It is most commonly served as a burger topped with tomato sauce and mozzarella cheese. Cudighi is also delicious when made into lasagna, spaghetti or pizza and can can be substituted into just about any Italian dish. 2 lb. fresh ground beef 2 lb. fresh ground pork 1 tbsp. garlic powder (or 3 cloves fresh, minced) 1 tsp. ginger 1 tsp. cinnamon 1/2 tsp. ground cloves crushed red pepper flakes (1/2 tsp. mild; 2 tsp. medium; 1 tbsp. hot!) OPTIONAL: 1 large green pepper, finely chopped 1/2 large onion, finely chopped Combine all ingredients in a large bowl. Mix well. Separate into about 4 or 5 Ziploc style freezer bags and freeze up to 4 to 6 months. Note: If you prefer, separate Cudighi into patties or make it into links before freezing.
