TEXAS HASH
3 tbsp. shortening
1 med.-sized onion, chopped
1 sm. green pepper, chopped
1 1/4 c. chopped celery
1 lb. ground beef
1 (1 lb.) can tomatoes
1 tsp. chili powder
1 tsp. salt
1/8 tsp. pepper
1 (8 oz.) pkg. spaghetti
3/4 c. coarsely shredded Cheddar cheese

Heat shortening in skillet. Add onion, green pepper and celery; cook over moderate heat until tender. Push vegetables to side of skillet; add meat and cook and stir until it loses its pink color. Mix meat and vegetables together; cover and simmer 3 minutes over low heat. Remove any excess fat. Add tomatoes, chili powder, salt and pepper; simmer 20 minutes.

While meat is cooking, cook spaghetti according to package directions. Mix spaghetti and meat together and pour into a 2 quart casserole. Chill until ready to bake. Top with cheese and bake in a preheated 350 degree oven 25 to 30 minutes, or until bubbling hot. Serves 6 to 8.
