HEAVENLY PINEAPPLE MOLD 
1 (3 oz.) pkg. lemon flavored Jell-O
1 c. boiling water
3/4 c. pineapple juice
1 tbsp. lemon juice
1 1/4 c. drained crushed pineapple
1 c. shredded sharp Cheddar cheese
1 c. heavy cream, whipped

Dissolve gelatin in boiling water; add pineapple juice and lemon juice. Chill until slightly thick. Fold in drained, crushed pineapple, cheese and whipped cream. Pour into 1 1/2-quart mold; chill until firm. Unmold. Must do ahead.

Tip: Spray mold with Pam for easy unmolding.
