BRUNSWICK STEW | |
1 (5 lb.) hen 5 lbs. stew beef 3 qts. tomatoes 2 qts. potatoes, diced 1 qt. butter beans 1 qt. corn 1 qt. onion, cut fine 2 tbsp. sugar 1/2 lb. butter 4 tbsp. Worcestershire sauce Salt to taste 1/2 c. vinegar 1/2 c. tomato catsup 2 pods red pepper, hot Cook chicken and beef until tender, when cool pull meat apart in small pieces. Use broth from meat to cook vegetables in. First butterbeans, onions, and tomatoes, later add corn, potatoes and pour into meat mixture. Season with butter, catsup, Worcestershire sauce and salt. Put hot pepper pods into the mixture whole and remove when it is hot enough. Cook slowly until done. I cook my potatoes separate and when done mash with a potato masher and add to other mixture. |
