CRANBERRY BREAD | |
1 1/2 c. fresh cranberries 2 c. all-purpose flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1/4 c. butter 1 egg, beaten 1 tsp. grated orange rind 3/4 c. orange juice 1 1/2 c. golden raisins Wash and drain cranberries. Grind cranberries coarsely in blender and set aside. Combine flour, sugar, baking powder, soda, and salt in a large mixing bowl. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Add egg, orange rind, and juice, then stir in raisins and cranberries. Spoon into a greased and floured 9x5x3 inch loaf pan. Bake at 350 degrees for 55 to 60 minutes or until done. |
