SWEET AND SOUR PORK 
2 lb. lean pork (cut in 2" squares)
2 tbsp. shortening or oil
1/3 c. water
1 (20 oz.) can pineapple chunks
1/4 c. brown sugar
2 tbsp. cornstarch
1/3 c. vinegar
1 c. mushrooms
1 can (8 oz.) water chestnuts
2 c. steamed rice
1/2 tsp. salt
1 tbsp. soy sauce
1/2 green pepper, sliced
1/2 onion, sliced

Brown pork in oil. Add water, simmer 1 hour. While pork is cooking drain juice from pineapple chunks into saucepan. Add brown sugar, cornstarch, salt and vinegar. Cook until thickened. Stir in soy sauce, pineapple chunks, vegetables and cooked meat. Cook until vegetables are tender. Serve over steamed rice. Serves 8.
