QUICK BAKED TAMALE 
1 lb. ground beef
2 tbsp. lard/drippings
2 tsp. salt
1/8 tsp. pepper
2 tsp. chili powder
3/4 c. chopped onion
1 #2 can whole kernel corn
1 #2 can tomatoes

Brown meat in lard. Add seasonings, onions, corn and tomatoes. Bring to a boil, pour into 8 x 12 inch baking dish, spread corn meal topping over meat mixture. Bake in moderate hot oven, 400 degrees for 35-40 minutes.

CORN BREAD TOPPING:

1 c. sifted flour
1 1/2 tsp. baking powder
1/4 c. shortening
1 c. milk
1/4 tsp. salt
1 c. corn meal
1 egg, beaten

Sift flour, baking powder and corn meal together. Cut shortening into mixture until fine grained. Add milk and egg, stirring until well blended. Spread on top of meat mixture.
