DATE PIN WHEELS 
1/2 c. butter
1/2 c. brown sugar
1/2 c. white sugar
1 egg
1/2 tsp. vanilla
1 3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 lb. dates, chopped
1/2 c. water
1/2 c. butter
1/2 c. sugar
1 c. chopped nuts

Combine in saucepan dates, water, butter and sugar. Cook until thick, stirring constantly. Cool. Add nuts.

Mix butter and sugars; add egg; beat well. Add vanilla, dry ingredients. Stir until smooth. Divide dough in half. Roll 1 part on well floured surface until 1/4 inch thick. Spread half of date mixture over dough. Roll like jelly roll, repeat with remaining half. (Roll rolled up rolls back and forth on floured surface a little more if you want smaller size cookies.) Chill several hours or overnight. (Cover dough with wrap.) Slice, place on lightly greased pan. Bake at 350 degrees for 8-10 minutes depending on size of cookie.
