CARROT RAISIN COOKIES 
Pour 1/2 cup boiling water over 1/2 cup raisins. Let sit 5 minutes and drain.

Blend: 1 c. brown sugar 1 unbeaten egg 1 tsp. lemon extract

Add: 1/2 c. finely grated raw carrots 1 1/2 c. flour 2 tbsp. baking powder 1/2 tsp. salt

Drop onto greased cookie sheet and bake at 400 degrees for 10 minutes.
