4-5 lb. beef brisket or 4-5 lb. venison 1/2 tbsp. liquid smoke 1 tbsp. season salt 1 tbsp. garlic salt 1 tbsp. pepper (red, black, white or mixed) 1 tbsp. soy sauce 1 tbsp. Worcestershire sauce Trim as much fat as possible from meat, and cut into strips about 1/8 inch thick. Mix all ingredients in measuring cup and add water to make 1 cup. Marinate overnight. Place oven rack in highest position and lowest position. Set oven to bake at the lowest possible setting. Hang strips from toothpicks on top rack. Use foil-lined cookie sheet as drip pan for easy clean up. The idea is to dry more than cook the meat. Usually takes about 8-9 hours. Serves 8 adults or 1 child. |
