ZUCCHINI PIE 
3 eggs
4 c. sliced zucchini
1 c. diced onion
1 tsp. basil
1 tsp. thyme
1/2 tsp. oregano
2 tbsp. butter
2 c. grated Jack or Cheddar cheese
2 tbsp. Dijon mustard
1 9" unbaked pie shell

Preheat oven to 375 degrees. Saute zucchini, onion and herbs in butter. Beat eggs in a large bowl. Stir in cheese and then zucchini mixture. Spread mustard over bottom of pie shell. Pour in zucchini filling. Bake for 30-40 minutes or until knife inserted near center comes out clean. Serves 4-6.
