ZUCCHINI PIE | |
4 c. thin sliced zucchini 1 c. chopped onions 1/2 c. butter 2 tbsp. parsley flakes 1/2 tsp. salt 1/2 tsp. pepper 1 pie crust 1/4 tsp. garlic powder 2 tsp. prepared mustard or Dijon 1/4 tsp. sweet basil leaves 1/4 tsp. oregano 2 beaten eggs 2 c. shredded Mozzarella cheese Heat oven to 375 degrees. Saute onion and zucchini until tender, about 10 minutes. Stir in parsley and other seasonings. In a separate bowl, mix eggs and cheese. Mix zucchini and eggs in with cheese. Spread mustard over pie crust and pour in vegetable mixture. Bake 18 or 20 minutes or until knife in center comes out clean. |
