OLD FASHIONED COCONUT PIE 
1 1/2 c. sugar
2 c. milk
1 c. coconut
1 tsp. vanilla
1/4 tsp. cream of tartar
1 tsp. vanilla
1 9" pie shell, baked & cooled
1/4 c. flour
3 egg yolks, slightly beaten
1 tbsp. butter
3 egg whites
3 tbsp. sugar
1/3 c. coconut

In medium saucepan combine sugar and flour, gradually stir in milk. Cook and stir over medium heat until thickened and bubbly, about 6-8 minutes. Stir 1 cup of hot mixture into egg yolks; immediately return all mixture to hot mixture in saucepan and stir 3-4 minutes longer. Remove saucepan from heat and stir 1 cup coconut, butter and vanilla. Pour into pie shell, set aside.

Beat egg whites and cream of tartar to form peaks. Add sugar, a little at a time. Add vanilla and beat well. Spread on pie and sprinkle remaining coconut on top. Brown in oven at 350 degrees for 10-15 minutes. Chill until set, about 3 hours. Yield: one 9 inch pie.
