APPLE MUFFINS 
1 1/2 c. flour
1 c. sugar
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. cloves
1 c. chopped apple
1/2 c. chopped nuts
2 eggs
1/2 c. buttermilk
1/2 c. butter, melted

TOPPING:

1/2 c. flour
1/3 c. brown sugar
1 tsp. cinnamon
1/4 c. butter, softened

Mix topping ingredients flour, brown sugar, cinnamon, and butter, then set aside.

Mix flour, sugar, baking powder, soda, spices. Add apples and nuts. Toss to coat.

In a small bowl, beat eggs with fork. Beat in buttermilk and butter. Add to flour mixture. Stir until just blended. Fill muffin cups 2/3 full and top with streusel topping. Bake at 375 degrees for 15 to 25 minutes.
