MEXICAN DELIGHT CASSEROLE 
1 1/2 c. water
1/2 c. quick cooking grits
1/4 tsp. salt
1 tbsp. parsley

STEP #2:
1/2 lb. beef (ground)
2 tbsp. soy sauce

STEP #3:
1 (10 oz.) can tomatoes & green chilies
1 (8 oz.) can tomato sauce
1 (7 oz.) can corn, drained
1/3 c. crushed corn chips
1 slightly beaten egg
3/4 tsp. chili powder
1/4 tsp. dried oregano

Combine ingredients for step #1. Bring to boiling. Cook, stirring occasionally, for 8-10 minutes or until thick. Cool slightly. Thoroughly grease medium size casserole dish. Spoon grits into dish and spread grits up sides of dish with back of spoon (to form a shell). When cool, cover and refrigerate. Cook beef and soy sauce. Drain, then add ingredients for step #3. Spoon into dish. Bake at 350 degrees for 35-45 minutes. Melted Cheddar cheese can be poured on top when finished baking.
