MOONBEAM'S MONTEREY CHICKEN 
2 whole chicken breasts, boned & skinned
1/2 c. Catalina salad dressing
1 med. onion, sliced
1 tbsp. butter
Salt & pepper
4 slices Monterey Jack cheese

Marinate chicken breasts in Catalina salad dressing overnight. Grill chicken breast until tender. Saute onion in butter. Season to taste with salt and pepper. Top chicken breast with Monterey Jack cheese. Place under broiler until cheese is melted. Top with sauteed onions.
