DATE-NUT CAKE 
1/2 c. butter
1 tbsp. liquid sweetener
1 egg
1 c. dates, finely chopped
1 1/2 c. diabetic applesauce (peaches may be substituted for applesauce)
1 c. pecans, chopped
2 c. flour
2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. vanilla

Cream butter. Add egg, sweetener, vanilla and applesauce. Beat together. Sift dry ingredients together and add to other mixture. Add dates and nuts and beat for 2 minutes with an electric mixer. Put into buttered loaf pan and bake in moderate oven (350°F) for 1 hour.
