SPINACH TARTLETS 
PASTRY:

1/2 c. butter
1 (3 oz.) pkg. cream cheese
1/2 c. flour

FILLING:

1 (10 oz.) pkg. frozen chopped spinach
2 tbsp. onion, chopped
1 egg, beaten
3/4 tsp. salt
1/8 tsp. pepper
1 c. cheese (crumbled Feta, grated Romano, Jack, or Cheddar)
1/4 c. melted butter

Combine ingredients for pastry. Pinch off small balls of dough; press into tiny muffin pans to form a thin shell. (Use end of wooden spoon to press dough.)

Defrost frozen spinach; squeeze excess moisture. Combine all ingredients for filling. With teaspoon fill pastry-lined pans. Sprinkle with more grated cheese. Bake at 350 degrees for 25 minutes until lightly browned. Serve warm or cold. Yield: 24 tartlets.
