CINNAMON CURLS 
2 egg whites
1/2 c. sugar
1/2 c. all purpose flour
1 tsp. cinnamon
1/4 c. butter, melted and cooled

In a small mixing bowl beat egg whites until soft peaks form. Gradually add sugar beating until stiff peaks form. Combine flour and cinnamon and stir into egg whites. Stir in cooled, melted butter until well mixed. Grease generously two 4 inch circles on a cookie sheet. Drop a small mound of batter (2 level measuring teaspoon) onto each greased spot. Spread with back of spoon into 3 inch circles. Bake at 350 degrees for 6-8 minutes until done. Immediately loosen and roll around the greased handle of a wooden spoon. Slice off cookie and cool. Repeat with remaining batter, using a clean greased cookie sheet.

ROLLING UP COOKIES: As soon as cookies are golden brown on the edge, loosen with pancake turner, working quickly to prevent hardening. If they do harden you can put them back into the oven for 1 minute to re-warm and soften.
