CINNAMON STICKS 
2 egg whites
1/2 c. sugar
1/2 c. flour
1 tsp. cinnamon
1/8 tsp. cinnamon extract
1/4 c. butter, melted and cooled

In a small bowl, beat egg whites until soft peaks form. Gradually add sugar, beating until stiff peaks form. Combine flour and cinnamon and fold into egg whites. Stir cinnamon extract into butter and add this mixture to batter. Drop 2 level teaspoons of batter onto greased cookie sheet; spread with spatula into 3 inch circles, baking 2 to 3 cookies at a time and allowing room for spreading. Bake in 350 degree oven for 6 to 7 minutes until edges are golden. Cool on cookie sheet 2 to 3 seconds, then loosen and quickly roll up by winding around the oiled end of a wooden spoon. Slide off to cool. (If cookie becomes too stiff to roll, rewarm in oven for 1 minute.) Makes 2 1/2 dozen.
