LEE'S RHUBARB PIE 
4 c. rhubarb, diced
2 tbsp. flour
1 1/2 c. sugar
1/8 tsp. cinnamon
1/8 tsp. nutmeg
1 egg, well beaten
2 tbsp. butter, cut into bits

Line pie plate with crust. Combine flour, sugar and spices. Sprinkle 1/4 cup of this mixture over pie crust. Add rhubarb and sprinkle remaining sugar mixture over rhubarb. Pour beaten egg evenly over pie.

Dot with butter and cover with remaining crust. Slice 3 holes in crust for steam to escape. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake for another 45 minutes.
