CHICKEN MOZZARELLA 
3 whole chicken breasts
3 eggs
Italian seasoned bread crumbs
Butter
Mushrooms
1 c. grated mozzarella cheese
1/2 c. chicken broth

Skin and debone breasts. Cut into strips 1-1/2 inches wide. Marinate in beaten eggs for at least 1 hour. Roll bread crumbs. Brown in butter. Place in glass pan (8 x 12 inches). Top with mushrooms and cheese. Add 1/2 cup chicken broth. Bake at 350 degrees for 10 minutes in a covered pan. Remove cover and bake for 20 minutes.
