BRAN MUFFINS 
1 1/4 c. all purpose flour
1 tbsp. baking powder
1/4 tsp. salt
2 tbsp. sugar
2 c. Kellogg's Cracklin' Oat Bran cereal
1 c. milk
1 egg
3 tbsp. vegetable oil or shortening

Stir together flour, baking powder, salt and sugar. Set aside. Measure Kellogg's Cracklin' Oat Bran Cereal and milk into large mixing bowl. Stir to combine. Let stand 5 minutes or until cereal is softened. Add egg and oil. Beat well.

Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups.

Bake at 400 degrees for 20 minutes or until lightly browned.

12 muffins. Per serving (1 muffin) : 140 calories, 3 grams protein, 6 grams fat, 19 grams carbohydrate, 1.7 grams dietary fiber, 225 milligrams sodium.
