BEEF CHOUFFLEUR 
1 lb. beef round steak
2 tbsp. butter
1 lb. cauliflower, broken up
1 green pepper, cut 1 inch pieces
1/4 c. soy sauce
1 clove garlic, minced
2 tbsp. cornstarch
1/2 tsp. sugar
1 1/2 c. beef broth
1 c. chopped green onion
3 c. cooked rice

Cut meat in 1 inch chunks. In Dutch oven, brown meat for 5 minutes in butter. Add cauliflower, green pepper, soy sauce, and garlic. Stir lightly to coat vegetables. Cover pan and simmer until vegetables are tender for about 10-15 minutes. Blend cornstarch, sugar, and broth. Add to meat mixture with onions. Cook until sauce is thickened. Serve over rice.
