LOBSTER BISQUE 
4 tbsp. butter
4 tbsp. flour
2 tbsp. tomato paste
3 to 4 c. chicken stock
3 tsp. onion
Worcestershire sauce
2 to 3 c. sherry, or white wine
Thyme
Nutmeg
Lemon juice
Fresh ground pepper

3 c. cooked lobster meat (add coral and liver), 3 to 4 (1 1/2 lb.) lobsters, cook before

Melt butter, cook onion slowly. Add meat and cook low heat 5 minutes. Add flour and spices, blend for 3 minutes. Stir in chicken broth and 1 cup wine. Simmer 15 minutes. Add cream and heat, not boil 5 minutes before serving rest of sherry and pepper.
