CAROLYN'S ICE CREAM CAKE | |
1 half gallon vanilla ice cream 1 pkg. Sunshine butter cookies 2 bars German sweet chocolate 5 eggs, separated as directed Lightly grease 9"x13" baking dish. Crush cookies. Coat bottom of dish with 1/2 cookies. Melt chocolate with 2+ tablespoons water. Add 5 egg yolks, 1 at a time. Cool chocolate mixture while beating egg whites. Fold in egg whits to chocolate mix. Layer 1/2 chocolate mixture over cookie crumbs in dish. Add ice cream, softened, spread over chocolate layer. Add rest of chocolate over ice cream spreading even. Sprinkle rest of cookie crumbs over chocolate layer. Freeze for serving next day. HINT: It helps to freeze layers as you add them so that they don't roll up and chocolate doesn't sink through soft ice cream. |
