LEMON TORTE 
40 Ritz crackers
1/2 c. melted butter
4 egg whites
1/4 tsp. cream of tartar
1/2 tsp. vinegar
1 c. sugar
1 can lemon pie filling
Cool Whip

Crush Ritz crackers; add melted butter. Press in bottom of 9x13 inch pan.

Beat together egg whites, cream of tartar and vinegar until soft peaks form. Gradually add sugar, beating until soft peaks form. Spread meringue on top of cracker crust. Bake at 400 for 15 minutes or until lightly browned. Cool.

Spread lemon pie filing over meringue. Spread Cool Whip or whipped cream over lemon filling. Chill.
