JOE'S SPECIAL (SAN FRANCISCO) 
Boiling water
1 pkg. frozen chopped spinach
3/4 lbs. ground beef
1 c. chopped onion
1 tsp. pepper
4 lg. eggs, beaten
Salt to taste
1/2 c. shredded cheddar cheese

Pour boiling water over spinach; let stand for 10 minutes. Drain and cut into small chunks. Brown beef and onions in lightly oiled large skillet. Add spinach and seasonings.

Cook for 5 minutes. Stir in eggs; cook until eggs are set, stirring occasionally. Remove from heat. Sprinkle with cheese. Mix in lightly. Serve with toasted Parmesan French bread.

I had this dish when I was a teen at Joe's in San Francisco. Today I am in my 60's and live in the Northwest. I have also made this special dish for my family for many years always remembering eating at Joe's with my Mom and Dad. This recipe has something new to it, the cheddar cheese. I can't wait to try it. I also add a little Marsala or Cream Sherry wine.

Yes was a treat to be enjoyed both new Joes & original Joes. I enjoyed with parents. They cook right in front of you. What a treat plus people around broadway father John Patrick & mother Berethelle. This was at least 50 years ago. Try it, you'll love it!
