SWEET POTATOES AND APPLES 
12 oz. cooked sweet potatoes, peeled, sliced lengthwise into thin slices
2 sm. sweet apples, peeled, cut in half and then cut into thin slices
1/4 c. frozen orange juice concentrate (unsweetened), thawed
1/4 c. water
6 tsp. sugar
1/8 tsp. ginger
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 tbsp. + 1 tsp. butter

Preheat oven to 350 degrees. Arrange alternate slices of sweet potatoes and apples in a baking dish that has been sprayed with nonstick cooking spray.

Combine orange juice concentrate, water, sugar and spices. Pour mixture evenly over sweet potatoes and apples. Dot with butter. Bake, uncovered, for 1 hour. Makes 4 servings.
